Brownies!

Probably the most popular thing we make and we can easily get through a pan a day.  Just as well, then, that they are super simple to make.

500gr caster sugar

5 large eggs

200gr butter or baking marg

A splash of vanilla essence

120gr plain flour

100gr good quality cocoa powder

60gr choc chips, the darker the better

60gr pecans

1. Combine the sugar and eggs in the bowl of a standmixer or you can mix by hand, beat until white and creamy.

2. Melt the fat in a jug in the microwave and add to the eggs and sugar with the flour and cocoa, a pinch of salt and the melted fat.

Be careful when you start to mix it doesn’t splash everywhere!

3. When thoroughly combined add the choc chips and nuts.

4. Pour into a large square baking tin lined with baking parchment. Mine is 14′ by 14′

5. Pop in the oven at 170 for around 35 minutes, its important you don’t over cook as squidgey is so much better than crispy in the world of brownies.
