Fruit Scones

You will need:

500gr Plain flour

2 tsps bicarbonate of soda

4 and 1/2 tsp cream of tartar

1 tsp Maldon salt (please use  Maldon if you can!)

25gr butter and 50gr baking marg.

A generous handful of dries fruit, sultanas, apricots, cranberries, currants, peel or cherries, whatever you have.

300ml whole milk

1. This is so easy in a Kitchenaid or Kenwood stand mixer: put the dry ingredients in the bowl with the fats, turn on the beater and beat rapidly until combined.

2. Add the dried fruit and milk and beat briefly to combine, you should have quite a wet dough.

3. Turn out onto a generously floured board and flatten with your palms, you want it to be about 3cm thickness.

4. Cut out with pastry cutter, you should get six or seven.

5. Brush with beaten egg and bake in the oven at 220 for about ten, fifteen minutes.

6. Eat hot with salty butter and jam!
